Release Your Inner Child with These Watermelon Recipes

Summer means watermelon.

So, it’s time to whip up some fast and oh-so-easy summer watermelon salads.

Watermelon picked fresh from the produce stand at your grocery is bright, colorful and a favorite for all ages – but did you also know it’s full of health benefits?

Also think of our favorite summer fruit as a source of low-fat nutrition and hydrates. Watermelons are a big source of several vitamins: vitamin A, an antixoidant good for eye health; vitamin C, used to heal wounds, prevent cell damage and promote healthy teeth and gums; and vitamin B6, which helps brain function and converts protein to energy.

Watermelon even beats tomatoes for the highest concentration of lycopene of any fresh fruit or vegetable, a powerful antioxidant that helps fight heart disease and several types of cancer — prostate cancer in particular.

Two favorite recipes, perfect for your next summer soiree, only take minutes to prepare.

Watermelon Wedges with Feta and Mint

Ingredients:

Watermelon

Crumbled Feta

3 bunches fresh mint; 1/3 chopped, 2/3 left whole

Directions:

Slice watermelon into wedges.

Set on top of plate, leaving opening in center of plate for whole bunches of mint.

Sprinkle feta and mint on top of watermelon.

Keep cool until ready to serve.

Ingredients:

Watermelon

Sugar snap peas

Crumbled Feta

Fresh mint, chopped

Red wine vinaigrette dressing (right in grocery aisle)

Directions:

Chop watermelon and snap peas.

In mixing bowl, toss watermelon and peas with mint, feta.

Keep cool until ready to serve.

Minutes before serving, drizzle with red wine viniagrette.
