Chef Christophe David Says Tomato

You say tomato, NoMI Executive Chef Christophe David says tomato (in his very thick, adorable French accent).  With the opening of the highly anticipated, outdoor NoMI garden – an urban cocktail and food oasis on the 7th floor of the Park Hyatt Hotel – comes a new, seasonal, tomato-inspired menu courtesy of Chef David.  After all, it’s easy – he’s growing the tomatoes in said garden, right outside the kitchen doors.

Such tomato-influenced dishes as the Composition of Heirloom Tomato, with mozzarella di buffala, shallots, and chianti vinaigrette; the Farm Fresh Egg, with tomato and eggplant marmalade, Jamon de Mangalica, and crouton; and the BLT Salad, with Applewood smoked bacon, baby gem, and vine ripe tomatoes dot the very spring/summer-ish menu.

In my interview with David, he said, “Tomatoes have made great progress, they’ve been amazing these past few years.”  From the looks (and taste) of it, his menu is amazing too – it will run all summer until the produce is no longer usable.  He finished the interview by saying that “Spring…is the dreaming season.”

We’re looking forward to many-a midsummer night’s dreams in the NoMI garden this tomato-loving season.
