Italian Rainbow Cookies Are Quite Delightful

Although Chicago has its own culinary style, it never hurts to bring a little bit of the Big Apple to the Windy City.  We’re proud of our calorie-laden, deep-dish, stuffed pizza, but there’s something to be said about a true New York slice.  And how about them NY bagels?  There’s gotta be something in the water over there that just makes them better.  But….something I thought was reserved for New York – and New York only – has recently made an appearance at one of Old Town’s newest bakeries, Delightful Pastries: the Italian Rainbow Cookie.  I am actually made fun of every time I go to Manhattan because I search high and low for the best RC’s in the city – then I buy four pounds of them and store them in my freezer…until my next trip.

The owner of Delightful proudly declares that there’s only one other pastry shop in town that sells the infamous New Yorker-of-a-cookie, and that’s in Little Italy.  The pink, yellow and green layers of marzipan, separated by a thin spread of jelly and sandwiched between two decadent layers of dark chocolate is “better at Delightful than on the streets of New York,”says Dana Blankenship, New Yorker and General Manager of the pastry shop.  When asked what their other specialties were, he responded, “a wide array of French croissants, including a Belgian chocolate one and a marzipan almond croissant, plus a large selection of macaroons.  I think it’s unique that here in this neighborhood, we do breakfast, brunch and lunch options that are all-natural.”

Well, New York, if we’ve got ourselves Rainbow Cookies now, who knows what’s next.  Bring it on…
